And yes, I love tomatoes but I'm currently on a non-nightshade-eating protocol (FYI: potatoes, tomatoes, eggplants, bell peppers are all in the nightshade category and some people with autoimmune issues react to them badly with inflammation like yours truly here).

So the new kid on the block stepping in for me to enjoy Summer food to the fullest are berries!

Yesterday I just made a huge pot of rote Grütze which basically is a berry pudding. I did some research and there is an equivalent in Denmark that's obviously called rødgrød and in the Baltic states, Russia, Finland and Ukraine it goes under the name kissel.

It's super easy to make! All you need is:

  • berries (I went for a bag of frozen berries),

  • water or fruit juice

  • sugar

  • corn or potato starch for binding to make sure it gets this gelatinous pudding texture.

Just cook the berries with water or fruit juice and sugar and once it has been simmering for 15 minutes or so prepare your starch with some water and then add it to your berries, stir it into the berry mixture and it will start doing it's magic turning it into delicious berry pudding.

I made a huge batch and now it's sitting in my fridge waiting to be eaten. I love topping it with some kefir or yogurt and if you have vanilla sauce, that's a real match in heaven!
